Magic Truffle begins with truffle-infused gin, crafted using a fat-washing technique that gives the spirit a silky texture and deep earthy character.
Fresh lemon and lime bring brightness and balance, while cacao adds warmth and depth. Basil introduces a refreshing Mediterranean touch, and a delicate Parmesan finish elevates the cocktail with a rich umami complexity.
A bold yet elegant journey through truffle, citrus, cacao, and savoury notes.
Ingredients
• 6 cl Truffle-Infused Gin (fat-washed)
• 3 cl Fresh Lemon Juice
• 1.5 cl Simple Syrup
• Cacao Bitters
• 5 Fresh Basil Leaves
• Garnish: Parmesan Dust
Method
• Add the truffle-infused gin, lemon juice, simple syrup, cacao bitters, and basil leaves to a shaker.
• Fill with ice and shake vigorously until well chilled.
• Double strain into a chilled cocktail glass.
• Finish with a light dusting of Parmesan.

THE LEGEND OF THE BAY TREE
Throughout the Mediterranean, few plants have carried as much symbolism as the bay tree. Known scientifically as Laurus nobilis, the bay tree grows abundantly along the Turkish coast, including the hills and forests surrounding Bonjuk Bay. Today it is most commonly associated with cooking, but for thousands of years it was considered a sacred plant.
Its story begins in ancient Greek mythology with the tale of Apollo and Daphne.
According to the legend, Apollo, the god of music, poetry, healing, and prophecy, became enchanted by a nymph named Daphne. But Daphne did not return his affection. As Apollo pursued her through forests and valleys, she called upon the gods for help. Just as he was about to catch her, she was transformed into a bay tree.
Apollo, heartbroken, declared the tree sacred. He wove its leaves into a wreath and vowed to wear it forever. From that moment onward, the bay tree became a symbol of honor, wisdom, achievement, and divine inspiration.
This is where the tradition of the laurel crown originated. Victorious athletes, poets, scholars, and military leaders were often crowned with bay leaves as a sign of distinction. Even the word laureate, used today in titles such as "poet laureate" and "Nobel laureate," comes directly from this ancient tradition.
But the bay tree's reputation extended beyond mythology.
In the ancient world, bay leaves were believed to possess protective qualities. Temples dedicated to Apollo often contained bay trees, and priests would burn the leaves or chew them before delivering prophecies. Some believed the plant sharpened intuition and connected people to higher wisdom.
Modern science offers a different perspective. Bay leaves contain aromatic compounds that can have calming effects when inhaled. Their fragrance comes from essential oils produced by the plant, which may help explain why people associated the tree with clarity and wellbeing long before chemistry could explain it.
Today, bay trees continue to grow along the Mediterranean coastline much as they did thousands of years ago. While most of us no longer wear laurel crowns or seek prophecies from sacred groves, the tree remains a living connection to the stories, beliefs, and traditions of the ancient world.
The next time you catch the scent of bay leaves carried on a warm coastal breeze, you are experiencing something people have recognized for millennia a plant whose roots reach not only into the earth, but deep into the cultural history of the Mediterranean.
